  1. chop the onions and sautee them in butter until at least soft and translucent. caramlize to taste.
  2. add 1 cup of red wine, beef stock, and thyme.
  3. cover and simmer for about 20 minutes
  4. add the chopped stilton and remaining liquid.
  5. cover and simmer for another 20 minutes
  6. stir well, serve topped with croutons
