Onion SoupOnion Soup
ingredients
- 4 tbsp butter
- 4 medium onions
- thyme
- red wine (2 cups)
- beef stock (1 cup)
- water (1 cup)
- stilton (3 or 4 oz, chopped/crumbled)
preparation
- chop the onions and sautee them in butter until at least soft and
translucent. caramlize to taste.
- add 1 cup of red wine, beef stock, and thyme.
- cover and simmer for about 20 minutes
- add the chopped stilton and remaining liquid.
- cover and simmer for another 20 minutes
- stir well, serve topped with croutons
