Shrimp Saganaki

Shrimp Saganaki


Heat oven to 425°.

Use either fresh shrimp (deveined) with tails, or Trader Joe's frozen veined, uncooked shrimp with this dish. (Just be sure the shrimp has been unfrozen first.)

In a pan, heat olive oil and add a tablespoon of garlic puree. Add one large roughly chopped white onion. After garlic and onion is cooked, add shrimp. Fry only until shrimp are thoroughly pink and no longer. Do not overfry shrimp -- they cook quickly. Remove from pan.

In the same cooking pan you used to fry the shrimp, add two diced, fresh tomatoes. Add tablespoon of lemon juice and tablespoon of salt and tablespoon of oregano. Cook tomatoes until they begin to become a sauce, but still a little chunky.

Pour "sauce" over shrimp in baking dish. On top of shrimp and sauce, crumble feta cheese. Place dish in oven.

Remove dish as soon as feta begins to melt. This should take only a minute or two.

Serve with fresh french bread that can soak up the tomato sauce when dipped.
