Boiled Eggs, all the ways

Sous Vide - Hard-Boiled

  1. Heat water to 167°F

  2. Cook eggs for 1 hour

  3. Move eggs to ice water bath for 5 minutes, then peel

Soft/Jammy

This definitely works better with older eggs that have had a chance to lose some water content. (The egg will pull away from the shell more easily, making peeling a lot less of a fight.)

  1. Bring water to a roiling boil

  2. Lower eggs delicately into the water. If you're only doing a couple eggs, you can reduce the heat to a simmer

  3. Cook exactly 7 minutes, then move the eggs into an ice bath

  4. Wait 3 minutes, then peel the eggs

Notes

Hard

  1. Same as soft, but increase cook time from 7 minutes to 11 minutes. Ice bath the same way.
