Chickpea Dense Salad
Salad
- 1 15oz can chickpeas, drained and rinsed (optionally roasted)
- 1.5 cups tightly diced cucumber
- 1.5 cups diced bell pepper
- 1 cup halved cherry tomatoes
- 1/2 cup pitted olives, roughly chopped
- 1/3 cup chopped pepperoncini peppers
- 1/ cup crumbled feta cheesee
Vinaigrette
- 1/2 cup olive oil
- 3 tbsp red wine vinegar
- lemon juice (half a lemon or 1 tbsp)
- 1 tsp dijon mustard
- 1/2 tsp garlic poder
- 1/2 tsp dried oregano
- 1/4 tsp salt
- 1/4 tsp black pepper
