Cranberry Chipotle BBQ Pulled Pork

Ingredients

Garnishes (optional/to taste)

Directions

  1. Place pork in slow cooker, and add all but 1/3 cup of the beef broth. Cover and cook on low for 8-10 hours or until the pork is tender and falling apart

  2. In large pot over medium heat, mix together tomato paste, cranberry sauce, vinegar, remaining 1/3 cup of beef broth, brown sugar, worcestershire sauce, salt, pepper, chipotle, garlic powder, and onion powder. Whisk periodically until smooth and heated through and the cranberry sauce melts into the blend

  3. Reduce heat to low and cook another 15-30 minutes, stirring occasionally

  4. Remove pork from slow cooker and shred with 2 forks. Mix with the bbq sauce to taste, reserving the extra bbq for serving

  5. Serve up however you like; can be made into sandwiches on buns, served over slider rolls, etc. Top with garnishes and serve with more bbq sauce
