Peel your lime(s) and put into a bowl with around 3 tbsp of sugar per lime, stir, and cover
Juice the lime(s) and store in an airtight container
After the peels have softened in the sugar and it's mostly dissolved, pour the lime juice into the mix and stir to combine and dissolve the sugar
Taste for sweetness and add sugar if needed, then strain back into a bottle and refrigerate
