Dice the spam into half inch cubes (roughly) and toss with the ground spices to coat evenly
Fry in a cast iron pan until browned pretty thoroughly. Add a neutral high smoke point oil if needed. Turn carefully allowing all sides to brown and crisp
When the cubes are all well browned and crusty, add the sliced garlic to the pan (adding more oil if needed) and toss it all together, watching heat carefully
When the garlic is brown and starting to caramelize, remove from heat

This can be added to scrambled eggs/omelettes, served over rice, etc
