Add mushrooms to a pan over medium-high heat and spread them out. Leave uncovered and just let it go until the mushrooms release a lot of their moisture and begin to brown. Don't stir! This will take at least 10 minutes, don't rush it. Watch under the mushrooms for moisture, when they start to dry out you're ready to go forward
Add 1 tbsp toasted rice powder, the chili flakes, sugar, fish sauce, and lime juice. Stir to combine and taste for seasoning.
Turn the heat to low and stir in all the herbs and veggies
Serve with cooked sticky rice and top with fresh mint or Thai sweet basil, and, sprinkle with the extra toasted rice powder and fresh mint leaves
