Quinoa Tortilla Soup

Ingredients

Directions

  1. Pour olive oil into a large pot over medium-high heat

  2. Add onion and saute until translucent

  3. Add in garlic cloves and give it another minute

  4. Add bell pepper, another minute

  5. Add stock, diced tomatoes, green chilis, quinoa, black beans, and corn

  6. Add the spices and bring the soup to a boil, then reduce to a simmer

  7. Simmer covered for 20 minutes, then simmer another 20 minutes uncovered

  8. Remove from heat and stir in lime juice and cilantro
