Mix 2 cups boiling water with 1/2 tsp table salt, then soak the TVP in it
Prep oil in a deep pot or other implement for frying on medium-high heat
Drain the TVP and press the excess water, then stir the TVP into 1-2 tbsp plain greek yogurt to coat
Mix the flour, curry powder, and ground cumin to make a coating/seasoning mix
Dredge the TVP in the seasoning and toss to coat
Fry the coated TVP to golden brown, then drain and set aside
In a smaller pan over medium heat, get some oil hot (1 tsp maybe) and add the garlic just to let it cook a bit
Add to the garlic the tomatoes, smoked paprika, cayenne, and 1/2 tsp kosher salt. Stir to combine well and simmer on low for 5 minutes
Add the fried TVP to the warm sauce and stir to coat, and serve hot
Serve hot with a dollop of extra greek yogurt on the side
