Preheat oven to 400°F
Drain and rinse the chickpeas, then pat them dry
Toss the chickpeas with a generous drizzle of olive oil and generous pinches of salt, then spread evenly across a baking sheet
Roast for 20 minutes, or until crispy
Pull from oven and if seasoning with other spices, toss that all together while they're still warm
Paprika, curry powder, chipotle powder, cayenne pepper
