Slow Cooker Green Chile Chicken

  1. To the slow cooker, add the onion, bell pepper, jalapeno, garlic, cumin, chili powder, green chiles. Drizzle with oil and stir to coat evenly and combine.

  2. Place the chicken on top of the vegetables and spices.

  3. Evenly pour the salsa verde on top. Cover with the lid and cook on high for 3-4 hours, or on low to 6-8 hours, or until the chicken is done. Chicken will shred easily when it's cooked through.

  4. After shredding the chicken, drizzle with the lime juice and stir in the cilantro. Add spices to taste, including a pinch of cayenne for spice if desired.
