Vegetable Stock

Directions

  1. Chop up all the vegetables finely and put into a pan

  2. Crush up any dry ingredients (mushrooms, seaweed, etc) and sprinkle over the vegetables

  3. Whisk together the tomato paste, vegetable oil, miso, and other liquids/soft ingredients and toss into the vegetables to coat

  4. Roast, tossing occasionally, at 300°F for 2-3 hours until the vegetables are shrivelled and browned

  5. Transfer vegetable mixture to a large pot and add water (2 parts pre-roasting vegetable weight : 3 parts water)

  6. Place back in the oven for another hour and then strain the solids
