Grilled Salmon Onigiri (Rice Cooker Edition)

Directions

  1. In a rice cooker, wash the rice multiple times until the water runs clear.

  2. Add water up to the ‘2’ line, then add soy sauce, rice vinegar, and dashi. Mix well.

  3. Place frozen salmon filets directly into the rice cooker. Cook as you normally would for white rice.

  4. Once cooked, gently break apart the salmon with a rice spatula.

  5. Add furikake and bonito flakes. Mix until the salmon is evenly dispersed. Adjust seasoning as needed.

  6. Use an onigiri mold to shape into triangles.

  7. Grill the onigiri on a hot non-stick skillet with 1 tbsp neutral oil until all sides are crispy.
